The Story Behind It

The Tale of Chapli Kebab

Story updated

Chapli kebab, a spiced flat minced-meat patty, originates from Peshawar in Pakistan's Khyber Pakhtunkhwa region, where it remains a signature Pashtun specialty; its name is thought to derive from a word for flat or sandal-shaped. It's traditionally cooked in a wide pan with generous oil.

Ingredients

Scale:· 5 servings
  • 2 lbs ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, minced

  • 1 tbsp coriander seeds, crushed
  • 1 tsp cumin seeds, crushed
  • 1 tsp red chili flakes
  • 1 egg
  • Oil, for frying
  • Salt, to taste

Instructions

  1. 1Combine the ground beef with onion, tomatoes, green chilies, cornmeal, crushed coriander and cumin seeds, chili flakes, egg, and salt.
  2. 2Mix thoroughly and shape into wide, flat patties.
  3. 3Refrigerate for 30 minutes to firm up.
  4. 4Heat oil in a large skillet and shallow-fry the patties over medium heat until deeply browned and crisp on both sides, about 6-7 minutes per side.
