The Tale of Shopska Salad
Shopska salad, tomatoes, cucumbers, peppers, and grated white brined cheese, takes its name from the Shopi people of the Balkan region spanning Bulgaria, Serbia, and North Macedonia. It gained wider popularity in the 20th century, partly through Bulgarian state tourism promotion, becoming a beloved regional dish.
Ingredients
Scale:· 4 servings
- 4 ripe tomatoes, diced
- 2 cucumbers, diced
- 1 green bell pepper, diced
- 1 small red onion, thinly sliced
- 150 g sirene (white brined cheese), grated
- 1/4 cup black olives
- 3 tablespoons sunflower or olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- 1Combine the diced tomatoes, cucumbers, green pepper, and red onion in a large bowl.
- 2Drizzle with the oil and vinegar and season with salt and pepper, then toss gently.
- 3Divide the salad among plates or leave in the bowl.
- 4Generously grate the sirene cheese over the top so it covers the vegetables like snow.
- 5Scatter the black olives around the salad.
- 6Garnish with chopped parsley and serve immediately, mixing the cheese in just before eating.
