The Tale of Selsko Meso (Village-Style Meat Stew)
Selsko meso, meaning 'village meat,' is a hearty stew of meat, mushrooms, and vegetables baked in a clay pot, its name signaling rustic countryside cooking rather than urban cuisine. It remains a staple of Macedonian home kitchens and taverns today.
Ingredients
Scale:· 6 servings
- 800 g pork shoulder, cubed
- 2 tablespoons lard or oil
- 1 onion, chopped
- 2 red bell peppers, sliced
- 200 g mushrooms, sliced
- 3 tablespoons tomato paste
- 1 cup white wine
- 1 cup chicken or beef stock
- 2 bay leaves
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- 1Heat the lard in a heavy clay pot or Dutch oven and brown the pork cubes on all sides, then remove and set aside.
- 2In the same fat, saute the onion until golden, then add the peppers and mushrooms and cook for 5 minutes.
- 3Stir in the tomato paste and paprika and cook for 2 minutes.
- 4Return the pork to the pot, pour in the wine, and let it bubble for a couple of minutes to cook off the alcohol.
- 5Add the stock and bay leaves, season with salt and pepper, then cover and simmer gently for 60-75 minutes until the pork is very tender.
- 6Uncover for the last 15 minutes to let the sauce reduce and thicken slightly.
- 7Traditionally finished under a broiler in the clay dish for a few minutes for a browned top.
- 8Serve hot with crusty bread or rice.
