Sinseollo (Royal Hot Pot)

Ingredients
- 1/2 lb beef, thinly sliced
- 6 cups beef stock
- 1/2 lb white fish fillet, sliced
- 4 oz beef meatballs, seasoned
- 4 eggs, some fried as thin sheets and sliced, one reserved
- 1 carrot, sliced decoratively
- 4 shiitake mushrooms, sliced
- 1 cup watercress or spinach
- 10 walnuts and pine nuts
- 2 tbsp soy sauce
- Salt and pepper, to taste
Instructions
- 1Season the beef stock with soy sauce, salt, and pepper, then bring to a gentle simmer.
- 2Arrange the sliced beef, fish, meatballs, sliced egg sheets, carrot, and mushrooms decoratively in concentric circles inside a traditional sinseollo brazier pot around the central chimney.
- 3Tuck watercress, walnuts, and pine nuts among the arranged ingredients.
- 4Pour the hot seasoned stock carefully around the arranged ingredients, filling the pot.
- 5Place hot charcoal in the central chimney of the brazier to keep the broth simmering at the table.
- 6Let everything cook gently for 10-15 minutes until heated through.
- 7Serve directly from the pot, ladling broth and ingredients into individual bowls.
