Tuwo masara, a corn-based paste, is paired with miyan kuka, a soup made from ground baobab leaves, in classic Hausa cooking shared by Niger and northern Nigeria. The baobab tree holds deep cultural significance across the Sahel, and this pairing reflects generations of Hausa and Fulani foodways.

Ingredients

  • 3 cups fine ground corn (masara) flour
  • 4 cups water, divided
  • 2 tablespoons dried baobab leaf powder (kuka)
  • 500 g beef or goat meat, cubed
  • 1/2 cup dried fish, cleaned
  • 1/4 cup ground crayfish
  • 3 tablespoons potash water or baking soda solution
  • 1/3 cup red palm oil
  • 1 onion, chopped
  • Salt and ground pepper to taste

Instructions

  1. 1Simmer the beef with the onion, salt, and pepper in 2 cups water until tender, about 30 minutes; reserve the stock.
  2. 2Bring the reserved meat stock to a boil, add the dried fish and ground crayfish, and simmer 5 minutes.
  3. 3Whisk the baobab leaf powder with a splash of cold water and the potash solution until it turns slightly gummy, then stir it into the simmering pot with the palm oil.
  4. 4Return the cooked meat to the pot and simmer the soup for 10 minutes, adjusting salt.
  5. 5For the tuwo, bring the remaining 2 cups water to a boil in a separate pot and gradually whisk in the corn flour.
  6. 6Reduce heat and stir vigorously with a wooden paddle for 8-10 minutes until it forms a smooth, stretchy paste with no lumps.
  7. 7Mold the tuwo into smooth balls with a wet spoon and place in serving bowls.
  8. 8Serve the tuwo hot alongside the miyan kuka soup, eaten by pinching off pieces and dipping.
