Ingredients
- 2 lbs pork bones or pork belly
- 1 bunch watercress or puha, washed
- 4 potatoes, peeled and halved
- 2 kumara, peeled and halved
- 1 onion, quartered
- Salt, to taste
- Doughboys (dumplings) made from 1 cup self-rising flour and 1/2 cup milk
Instructions
- 1Place the pork bones in a large pot, cover with water, and bring to a boil.
- 2Skim any foam from the surface, then reduce heat and simmer for 1 hour until the meat is tender.
- 3Add the potatoes, kumara, and onion, and simmer for 20 minutes.
- 4Stir in the watercress or puha and simmer for another 10 minutes until wilted.
- 5Mix the flour and milk into a soft dough and drop spoonfuls into the simmering broth as doughboys.
- 6Cook for 10-12 minutes until the doughboys are cooked through and fluffy.
- 7Season with salt and serve hot in bowls with the broth.
