The Story Behind It

The Tale of Hutspot

Story updated

Hutspot, mashed potato with carrots and onion, carries a beloved Dutch legend: that fleeing Spanish troops left a pot of stew behind during the 1574 Relief of Leiden, still celebrated annually as Leidens Ontzet. Food historians note the story is likely embellished, since potatoes weren't yet common in the Netherlands at that time, but the legend remains central to how the dish is told.

  • 2 onions, chopped
  • 4 tbsp butter
  • 1/4 cup warm milk

  • Salt and pepper to taste
