Ingredients

  • 1 cup lentils (masoor or mixed dal)
  • 2 cups rice
  • 2 potatoes, cubed
  • 1 cup chopped seasonal vegetables (cauliflower, beans, etc.)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 2 tbsp ghee or oil
  • Fresh coriander, chopped

Instructions

  1. 1Cook the rice separately by rinsing and simmering until fluffy and tender.
  2. 2Boil the lentils with turmeric and salt until soft, then whisk lightly to a smooth, soupy consistency.
  3. 3In a small pan, heat ghee and fry cumin seeds and garlic briefly until fragrant, then pour this tempering over the cooked dal.
  4. 4In another pan, sauté the onion until softened, then add the potatoes and vegetables with a splash of water.
  5. 5Cover and cook the tarkari (vegetable curry) for 15-20 minutes until the vegetables are tender, seasoning with salt and any preferred spices.
  6. 6Garnish both the dal and tarkari with fresh coriander.
  7. 7Serve the rice with dal and tarkari alongside, plus pickles (achar) as accompaniments.
  8. 8Traditionally eaten by mixing small portions of rice, dal and vegetables together by hand or with a spoon.
