Pandanus Cake

Ingredients
- 2 cups cooked pandanus fruit pulp
- 2 cups flour
- 1 cup sugar
- 3 eggs
- 200ml coconut milk
- 1 tsp baking powder
- 1/2 tsp salt
- 100g butter, melted
Instructions
- 1Preheat the oven to 175°C (350°F) and grease a baking tin.
- 2Beat the eggs with sugar until pale and slightly thickened.
- 3Stir in the pandanus pulp, coconut milk and melted butter until well combined.
- 4Sift in the flour, baking powder and salt, and fold gently until just combined into a smooth batter.
- 5Pour the batter into the prepared tin and smooth the top.
- 6Bake for 35-40 minutes until a skewer inserted into the center comes out clean and the top is golden.
- 7Cool in the tin for 10 minutes before turning out onto a rack.
- 8Slice and serve warm or at room temperature.
