The Story Behind It

The Tale of Kapana (Namibian Grilled Street Meat)

Story updated

Kapana, strips of beef grilled quickly over open flame at informal street stalls, is a fixture of Namibian urban life, especially in Windhoek's open-air markets, where vendors have sold it for decades. Served straight off the grill with a chili-tomato relish, it's become one of Namibia's most iconic street foods.

Ingredients

Scale:· 4 servings
  • 2 lb beef, thinly sliced
  • 2 tsp salt
  • 1 tsp chili powder
  • 2 tomatoes, diced
  • 1 onion, diced
  • 1-2 chilies, minced
  • Oil, for grilling

Instructions

  1. 1Season the sliced beef with salt and chili powder.
  2. 2Heat a flat griddle or heavy pan over high heat with a little oil.
  3. 3Grill the beef slices quickly in batches, turning frequently, until browned and cooked through, about 6-8 minutes total.
  4. 4Chop the grilled meat into bite-sized pieces on a board.
  5. 5Combine diced tomato, onion, and chilies into a fresh chakalaka-style relish to serve alongside.
  6. 6Serve the meat hot straight off the griddle with the relish for dipping.
