The Tale of Shan Noodles
Story updated
Shan noodles come from Shan State in eastern Myanmar, home to the Shan ethnic minority, whose cuisine differs distinctly from the more central Bamar culinary tradition. Built on flat rice noodles in a light, tomato-based sauce sometimes topped with pickled greens, the dish reflects Shan State's historic ties to neighboring Yunnan and northern Thailand.
