Ingredients
- 3 cups cooked rice, cooled
- 200g cooked fish, flaked
- 2 tbsp tamarind pulp, soaked and strained
- 1 onion, finely chopped
- 2 tbsp fried onions
- 2 tbsp fish sauce
- 1 tbsp chili powder
- Fresh coriander, chopped
- Roasted peanuts, for garnish
Instructions
- 1Combine the cooled cooked rice with the tamarind pulp, mixing thoroughly until the rice takes on a light pink-red color and tangy flavor.
- 2Add the flaked cooked fish and chopped onion, mixing gently to combine without breaking up the rice too much.
- 3Season the mixture with fish sauce and chili powder to taste.
- 4Let the salad rest for 10-15 minutes to allow the flavors to meld.
- 5Adjust the seasoning with more tamarind, salt or chili as desired.
- 6Transfer to a serving plate and top generously with fried onions, roasted peanuts and fresh coriander.
- 7Serve at room temperature as a light meal or snack.
