Ingredients

  • 3 cups cooked rice, cooled
  • 200g cooked fish, flaked
  • 2 tbsp tamarind pulp, soaked and strained
  • 1 onion, finely chopped
  • 2 tbsp fried onions
  • 2 tbsp fish sauce
  • 1 tbsp chili powder
  • Fresh coriander, chopped
  • Roasted peanuts, for garnish

Instructions

  1. 1Combine the cooled cooked rice with the tamarind pulp, mixing thoroughly until the rice takes on a light pink-red color and tangy flavor.
  2. 2Add the flaked cooked fish and chopped onion, mixing gently to combine without breaking up the rice too much.
  3. 3Season the mixture with fish sauce and chili powder to taste.
  4. 4Let the salad rest for 10-15 minutes to allow the flavors to meld.
  5. 5Adjust the seasoning with more tamarind, salt or chili as desired.
  6. 6Transfer to a serving plate and top generously with fried onions, roasted peanuts and fresh coriander.
  7. 7Serve at room temperature as a light meal or snack.
