Ingredients

  • 300g ground mutton or beef
  • 1 onion, finely chopped
  • 2 cups flour
  • 3/4 cup water
  • 1/2 tsp salt
  • 1 liter beef or mutton broth
  • Black pepper to taste
  • Chopped chives, for garnish

Instructions

  1. 1Make a firm dough with flour, water and salt; knead until smooth and let rest covered for 15 minutes.
  2. 2Mix the ground meat with the chopped onion, salt and pepper.
  3. 3Roll the dough thin and cut into small circles, about 4cm across.
  4. 4Place a small pinch of filling in the center of each circle and fold into a half-moon or small pouch, pinching to seal.
  5. 5Bring the broth to a boil in a large pot.
  6. 6Drop the small dumplings into the boiling broth and cook for 5-8 minutes until they float and are cooked through.
  7. 7Ladle the dumplings and broth into bowls and garnish with chopped chives.
  8. 8Serve hot as a comforting soup.
