Ingredients
- 300g ground mutton or beef
- 1 onion, finely chopped
- 2 cups flour
- 3/4 cup water
- 1/2 tsp salt
- 1 liter beef or mutton broth
- Black pepper to taste
- Chopped chives, for garnish
Instructions
- 1Make a firm dough with flour, water and salt; knead until smooth and let rest covered for 15 minutes.
- 2Mix the ground meat with the chopped onion, salt and pepper.
- 3Roll the dough thin and cut into small circles, about 4cm across.
- 4Place a small pinch of filling in the center of each circle and fold into a half-moon or small pouch, pinching to seal.
- 5Bring the broth to a boil in a large pot.
- 6Drop the small dumplings into the boiling broth and cook for 5-8 minutes until they float and are cooked through.
- 7Ladle the dumplings and broth into bowls and garnish with chopped chives.
- 8Serve hot as a comforting soup.
