Ingredients
- 500g ground beef
- 300g ground pork
- 6 cloves garlic, crushed
- 1 tsp baking soda
- 1 tsp ground cumin
- 1 tsp dried thyme
- 1/2 tsp ground allspice
- 1 cup beef stock (for kneading)
- Salt and pepper to taste
Instructions
- 1Combine the crushed garlic with beef stock and let it infuse for 15 minutes, then strain out the garlic solids.
- 2Mix the ground beef and pork together with the garlic-infused stock, baking soda, cumin, thyme, allspice, salt and pepper.
- 3Knead the mixture thoroughly for several minutes until it becomes sticky and well combined.
- 4Cover and refrigerate the mixture for at least 2 hours, or overnight, to let the flavors develop.
- 5Shape the mixture into small finger-sized sausages using wet hands.
- 6Grill the mititei over hot charcoal or a grill pan for 10-15 minutes, turning frequently, until well charred outside and cooked through.
- 7Serve hot with mustard and fresh bread.
