Mauritian Briani

Ingredients

  • 3 cups basmati rice, rinsed
  • 2 lb chicken, cut into pieces
  • 1 cup plain yogurt
  • 2 onions, sliced
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 tbsp briani masala spice blend
  • 4 potatoes, halved
  • A pinch of saffron soaked in warm milk
  • 1/4 cup oil or ghee

Instructions

  1. 1Marinate the chicken in yogurt, garlic, ginger, and briani masala for at least 1 hour.
  2. 2Parboil the rice until about 70% cooked, then drain.
  3. 3Fry the onions in oil until golden brown; set half aside for garnish.
  4. 4In a heavy pot, layer the marinated chicken and potatoes with the remaining fried onions.
  5. 5Top with the parboiled rice, spreading evenly.
  6. 6Drizzle the saffron milk over the rice and cover tightly with a lid.
  7. 7Cook over low heat for 35-40 minutes until the chicken is cooked and the rice is tender.
  8. 8Garnish with reserved fried onions and serve hot.
