Couscous au Mouton

Ingredients

  • 1 kg mutton or lamb, cut into pieces
  • 3 cups couscous grains
  • 2 onions, chopped
  • 3 carrots, chopped
  • 2 turnips, chopped
  • 1 small cabbage, chopped
  • 2 tbsp tomato paste
  • 1 tsp ras el hanout or mixed spices
  • 3 tbsp vegetable oil
  • 1 liter water or stock

Instructions

  1. 1Heat the oil in a large pot and brown the mutton pieces on all sides.
  2. 2Add the onions and cook until softened, then stir in the tomato paste and spices.
  3. 3Pour in the water or stock, bring to a boil, then reduce heat and simmer covered for 45 minutes.
  4. 4Add the carrots, turnips and cabbage, and continue simmering for another 25-30 minutes until the meat and vegetables are tender.
  5. 5Meanwhile, steam the couscous grains over simmering water (or prepare according to package directions), fluffing with a fork and a little oil between steamings.
  6. 6Once the stew is ready, mound the fluffy couscous on a large platter.
  7. 7Arrange the meat and vegetables over the couscous and ladle some of the broth over the top.
  8. 8Serve the remaining broth on the side for guests to add as desired.
