Ingredients

  • 4 whole chambo fish (or tilapia), cleaned
  • 2 lemons, juiced
  • 4 cloves garlic, minced
  • 1 thumb ginger, grated
  • 2 tbsp vegetable oil
  • 1 tsp paprika
  • 1 red chili, finely chopped
  • Salt and pepper to taste

Instructions

  1. 1Score the fish a few times on each side and rub with salt and lemon juice.
  2. 2Combine the garlic, ginger, oil, paprika, chili, salt and pepper into a marinade.
  3. 3Rub the marinade all over the fish, inside and out, and let sit for 20 minutes.
  4. 4Preheat a grill or griddle pan over medium-high heat.
  5. 5Grill the fish for 5-7 minutes per side, basting with any remaining marinade, until the skin is charred and the flesh flakes easily.
  6. 6Serve hot with nsima and a side of greens or tomato relish.
