Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup milk
- 1/2 tsp nutmeg
- 2 cups mixed mountain cheeses (Emmental, Appenzeller), grated
- 2 onions, thinly sliced
- 3 tbsp butter
- Salt to taste
Instructions
- 1Whisk flour, eggs, milk, nutmeg, and salt into a thick, elastic Spätzle batter.
- 2Press the batter through a spätzle press or colander into a pot of boiling salted water.
- 3Cook until the knöpfle float to the surface, then remove with a slotted spoon.
- 4Sauté onions in butter until deeply golden and caramelized.
- 5Layer the cooked knöpfle with the grated cheese in a warm dish, tossing until melted.
- 6Top with the caramelized onions and serve immediately.
