The Tale of Liberian Jollof Rice
Story updated
Liberia's take on jollof rice descends from the same Senegambian rice tradition that spread across West Africa centuries ago, likely carried along trade and migration routes from the Wolof heartland. Liberian versions tend to lean spicier and smokier than their neighbors', reflecting the country's particular blend of indigenous and Americo-Liberian influences.
