The Story Behind It

The Tale of Papa le Moroho (Basotho Maize Porridge with Greens)

Story updated

Papa, a firm maize porridge, is the Basotho staple eaten throughout Lesotho, following the same regional pattern in which maize gradually displaced sorghum as the dominant grain. Paired with moroho, wild or cultivated leafy greens cooked down simply with onion and tomato, it's a humble, everyday meal central to mountain-kingdom home cooking.

Ingredients

Scale:· 6 servings
  • 3 cups maize meal
  • 6 cups water
  • 1 bunch wild greens or spinach, chopped
  • 1 onion, chopped
  • 2 tbsp oil
  • Salt to taste

Instructions

  1. 1Bring the water to a boil and whisk in a portion of the maize meal to make a thin base.
  2. 2Gradually add the remaining maize meal, stirring constantly until very thick and smooth, about 15-20 minutes.
  3. 3Shape the papa into a mound and set aside.
  4. 4Heat oil in a pan and sauté the onion until soft.
  5. 5Add the chopped greens with a splash of water, cover, and cook 10-12 minutes until tender.
  6. 6Season with salt and serve the moroho alongside the papa.
