Sesotho Beef Stew (Nama)

Ingredients
- 1kg beef chuck, cubed
- 2 onions, chopped
- 3 tomatoes, chopped
- 2 carrots, chunked
- 2 potatoes, chunked
- 2 cloves garlic, minced
- 2 tbsp oil
- 1 tsp curry powder
- Salt and pepper to taste
Instructions
- 1Heat oil in a large pot and brown the beef cubes on all sides.
- 2Add the chopped onions and garlic, cooking until softened and fragrant.
- 3Stir in the curry powder and cook briefly to release its aroma.
- 4Add the chopped tomatoes and enough water to mostly cover the meat, then bring to a simmer.
- 5Cover and cook on low heat for about 1 hour until the beef begins to soften.
- 6Add the carrots and potatoes, continuing to simmer until the vegetables and meat are fully tender, about 30 more minutes.
- 7Season with salt and pepper, adjusting the liquid as needed for a thick, hearty gravy.
- 8Serve hot with papa or rice.
