Ingredients

  • 1kg beef chuck, cubed
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 2 carrots, chunked
  • 2 potatoes, chunked
  • 2 cloves garlic, minced
  • 2 tbsp oil
  • 1 tsp curry powder
  • Salt and pepper to taste

Instructions

  1. 1Heat oil in a large pot and brown the beef cubes on all sides.
  2. 2Add the chopped onions and garlic, cooking until softened and fragrant.
  3. 3Stir in the curry powder and cook briefly to release its aroma.
  4. 4Add the chopped tomatoes and enough water to mostly cover the meat, then bring to a simmer.
  5. 5Cover and cook on low heat for about 1 hour until the beef begins to soften.
  6. 6Add the carrots and potatoes, continuing to simmer until the vegetables and meat are fully tender, about 30 more minutes.
  7. 7Season with salt and pepper, adjusting the liquid as needed for a thick, hearty gravy.
  8. 8Serve hot with papa or rice.
