The Tale of Manakish Zaatar
Story updated
Manakish, flatbread topped with za'atar and olive oil, has been a Levantine breakfast staple for generations, baked fresh each morning in bakeries across Lebanon, Syria, Jordan, and Palestine. Its exact origin isn't tied to one place, but it's deeply woven into the region's shared za'atar-and-olive-oil culinary identity.

- 3 cups all-purpose flour
- 2 tsp instant yeast
- 1 tsp sugar
- 1 cup warm water
- 3 tbsp olive oil, plus more for topping
- 1/3 cup zaatar spice blend
- Salt, to taste
Instructions
- 1Knead flour, yeast, sugar, salt, olive oil, and warm water into a smooth, soft dough.
