Ingredients

  • 1 cup fine bulgur wheat
  • 1 lb ground lamb, divided
  • 1 onion, grated
  • 1 tsp ground allspice
  • 1/2 tsp cinnamon
  • Salt and pepper, to taste
  • 2 tbsp pine nuts
  • 1 small onion, finely diced (for filling)
  • 2 tbsp olive oil
  • Neutral oil, for frying

Instructions

  1. 1Soak bulgur in water for 15 minutes, then drain and squeeze dry.
  2. 2Blend bulgur with half the meat, the grated onion, allspice, cinnamon, salt, and pepper into a smooth paste for the shell.
  3. 3Sauté the diced onion in olive oil until soft, then add the remaining meat and pine nuts and cook until browned, for the filling.
  4. 4Shape the shell mixture into small oval shells, hollow the center, and stuff with the filling, sealing the ends.
  5. 5Heat oil to 350°F and fry the kibbeh in batches until deep golden brown, 4-5 minutes.
  6. 6Drain on paper towels and serve hot with yogurt.
