Ingredients

  • 1kg ground pork, with some fat
  • 3 stalks lemongrass, finely minced
  • 4 kaffir lime leaves, finely shredded
  • 3 cloves garlic, minced
  • 2cm galangal, minced
  • 2 shallots, minced
  • 2 chilies, minced
  • 2 tbsp fish sauce
  • Natural sausage casings, cleaned

Instructions

  1. 1Combine the ground pork with minced lemongrass, lime leaves, garlic, galangal, shallots, and chilies in a large bowl.
  2. 2Add fish sauce and mix thoroughly by hand until the mixture becomes sticky and well combined.
  3. 3Stuff the seasoned pork mixture into the cleaned sausage casings, twisting off links of the desired length.
  4. 4Prick the sausages lightly with a needle or skewer to prevent bursting during cooking.
  5. 5Grill the sausages over medium-hot charcoal, turning frequently, until browned and cooked through, about 20-25 minutes.
  6. 6Alternatively, cook the sausages in a covered pan over medium heat, turning occasionally, until fully cooked.
  7. 7Let rest briefly before slicing.
  8. 8Serve warm with sticky rice, fresh herbs, and a dipping sauce.
