Ingredients
- 1kg ground pork, with some fat
- 3 stalks lemongrass, finely minced
- 4 kaffir lime leaves, finely shredded
- 3 cloves garlic, minced
- 2cm galangal, minced
- 2 shallots, minced
- 2 chilies, minced
- 2 tbsp fish sauce
- Natural sausage casings, cleaned
Instructions
- 1Combine the ground pork with minced lemongrass, lime leaves, garlic, galangal, shallots, and chilies in a large bowl.
- 2Add fish sauce and mix thoroughly by hand until the mixture becomes sticky and well combined.
- 3Stuff the seasoned pork mixture into the cleaned sausage casings, twisting off links of the desired length.
- 4Prick the sausages lightly with a needle or skewer to prevent bursting during cooking.
- 5Grill the sausages over medium-hot charcoal, turning frequently, until browned and cooked through, about 20-25 minutes.
- 6Alternatively, cook the sausages in a covered pan over medium heat, turning occasionally, until fully cooked.
- 7Let rest briefly before slicing.
- 8Serve warm with sticky rice, fresh herbs, and a dipping sauce.
