Ingredients
- 500g white fish fillets, cubed
- 3 cups cooked rice
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tsp curry powder or fish spice mix
- 1 tsp turmeric
- 3 tbsp oil
- Fried onions for garnish
- Salt and pepper to taste
Instructions
- 1Season the fish cubes with turmeric, salt, and pepper, then pan-fry until golden and just cooked through; set aside.
- 2In the same pan, sauté the chopped onion until softened, then add tomatoes and curry powder, cooking until the sauce thickens.
- 3Gently fold the cooked rice into the tomato and onion sauce until evenly coated and heated through.
- 4Layer half the spiced rice in the bottom of a serving dish or pan.
- 5Arrange the cooked fish pieces over the rice layer.
- 6Top with the remaining spiced rice, pressing down gently to compact the layers.
- 7Cover and let sit briefly over low heat to meld the flavors, or bake briefly in a hot oven.
- 8Invert onto a serving platter if desired, garnish with fried onions, and serve warm.
