Ingredients

  • 600g lamb or chicken pieces
  • 2 cups all-purpose flour, made into thin dough patches
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 zucchini, chunked
  • 1 pumpkin or squash piece, chunked
  • 2 tbsp tomato paste
  • 1 tsp turmeric
  • 1 tsp baharat spice mix
  • Salt to taste

Instructions

  1. 1Brown the meat in a large pot with a little oil, then add the chopped onion and cook until softened.
  2. 2Stir in tomato paste, turmeric, and baharat, cooking until fragrant.
  3. 3Add chopped tomatoes and enough water to cover the meat, then simmer until the meat is nearly tender, about 30 minutes.
  4. 4Add the zucchini and pumpkin chunks, continuing to simmer until the vegetables are tender.
  5. 5Roll out the dough thinly and cut or tear it into irregular flat patches.
  6. 6Drop the dough patches into the simmering stew one at a time, stirring gently to prevent sticking.
  7. 7Cook for another 15-20 minutes until the dough patches are tender and the stew has thickened.
  8. 8Season with salt to taste and serve hot in bowls.
