The Story Behind It

The Tale of Trileçe

Story updated

Trileçe, a "three milks" sponge cake soaked in a mixture of evaporated milk, condensed milk, and cream, traces back to Latin America's tres leches cake, which spread to the Balkans and Turkey in recent decades and was enthusiastically adopted into Kosovo's dessert repertoire. It has become especially popular in Kosovo's cafés and bakeries in recent years.

Ingredients

Scale:· 8 servings
  • 6 eggs, separated
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 can evaporated milk
  • 1 can sweetened condensed milk
  • 1 cup heavy cream
  • 1/2 cup caramel sauce for topping

Instructions

  1. 1Preheat the oven to 180°C (350°F) and grease a baking dish.
  2. 2Beat the egg whites until stiff peaks form, then gradually beat in the sugar until glossy.
  3. 3Fold in the egg yolks one at a time, followed by the flour and baking powder, mixing gently to keep the batter airy.
  4. 4Pour the batter into the prepared dish and bake for about 25-30 minutes until golden and a toothpick comes out clean.
  5. 5Let the cake cool completely, then poke holes all over the surface with a fork.
  6. 6Whisk together the evaporated milk, condensed milk, and heavy cream, then slowly pour this mixture evenly over the cooled cake, allowing it to soak in.
  7. 7Refrigerate for at least 2 hours, or overnight, until the cake has absorbed the milk mixture and become moist throughout.
  8. 8Drizzle with caramel sauce before slicing and serving chilled.
