The Story Behind It

The Tale of Qebapa (Kosovar Grilled Kebabs)

Story updated

Qebapa, small grilled meat sausages served in flatbread with onion, descends from Ottoman-era kebab traditions that spread across the Balkans during centuries of Ottoman rule, closely related to Serbian and Bosnian ćevapi. In Kosovo they're a hugely popular street food, grilled fresh and eaten quickly at dedicated grill houses.

Ingredients

Scale:· 4 servings
  • 600g ground beef and lamb mix
  • 1 onion, grated and squeezed dry
  • 2 cloves garlic, minced
  • 1 tsp baking soda
  • 1 tsp paprika
  • Salt and pepper to taste
  • Flatbread (somun or lepinja) for serving
  • Chopped raw onion for garnish
  • Ajvar or kajmak for serving

Instructions

  1. 1Combine the ground meat with grated onion, garlic, baking soda, paprika, salt, and pepper.
  2. 2Knead the mixture thoroughly by hand until it becomes sticky and well combined, then refrigerate for at least 1 hour.
  3. 3Shape the mixture into small finger-shaped sausages, about the length and thickness of a finger.
  4. 4Prepare a hot grill or grill pan.
  5. 5Grill the qebapa, turning frequently, until well charred on the outside and cooked through, about 10-12 minutes.
  6. 6Warm the flatbread briefly on the grill as well.
  7. 7Serve the grilled qebapa inside or alongside the warm flatbread.
  8. 8Top with chopped raw onion and serve with ajvar or kajmak.
