Ingredients

  • 2 cups dried pandanus flour (or toasted flour as substitute)
  • 1 cup grated fresh coconut
  • 1/4 cup sugar (optional, for sweetness)
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. 1If starting from fresh pandanus, extract and dry the pandanus pulp, then grind it into a fine flour; otherwise use pre-made pandanus flour.
  2. 2Toast the pandanus flour lightly in a dry pan until fragrant, stirring constantly to avoid burning.
  3. 3Toast the grated coconut separately in a dry pan until lightly golden.
  4. 4Combine the toasted pandanus flour and toasted coconut in a bowl with a pinch of salt and sugar if using.
  5. 5Gradually add water, mixing by hand until the mixture comes together into a firm, slightly crumbly paste.
  6. 6Press the mixture firmly into a shallow dish or mold to compact it.
  7. 7Let it rest and firm up for about 10-15 minutes.
  8. 8Cut into small squares or bars and serve as a traditional sweet snack.
