The Tale of Nyama Choma (Kenyan Grilled Goat Meat)
Story updated
Nyama choma, Swahili for "grilled meat," traces back to the pastoralist Maasai, who relied heavily on livestock and grilled it simply over open fire. Other Kenyan communities adopted the practice, and it grew into the country's unofficial national dish, sold today at dedicated "choma joints" and served with ugali and kachumbari at gatherings big and small.
