Ingredients

  • 3 cups long-grain rice, soaked
  • 2 lbs lamb, cubed
  • 2 onions, sliced
  • 3 carrots, julienned
  • 1 head garlic, halved crosswise
  • 1 tsp cumin seeds
  • 1/2 cup oil
  • Salt and pepper, to taste

Instructions

  1. 1Heat oil in a large heavy pot and brown the lamb cubes on all sides.
  2. 2Add onions and cook until softened, then layer in the julienned carrots without stirring and cook a few minutes.
  3. 3Add cumin seeds, salt, pepper, and enough water to just cover the meat and carrots; simmer 30 minutes.
  4. 4Spread the soaked rice evenly over the meat mixture and add water to sit about an inch above the rice.
  5. 5Bury the garlic head halves into the rice, cover, and simmer on low heat until the rice is tender and the liquid is absorbed, about 25 minutes.
  6. 6Gently mix everything together before serving on a large communal platter.
