Miso Ramen

Ingredients

  • 4 servings fresh ramen noodles
  • 6 cups chicken or pork stock
  • 4 tbsp red or white miso paste
  • 2 tbsp sesame paste
  • 1 tbsp grated garlic
  • 1 tbsp grated ginger
  • 1 tbsp doubanjiang or chili paste
  • 1/2 lb ground pork
  • 2 tbsp butter
  • 1 cup bean sprouts
  • 1 cup corn kernels
  • 4 soft-boiled eggs, halved
  • 2 scallions, sliced

Instructions

  1. 1Stir-fry ground pork in a splash of oil until browned and crumbly, then set aside.
  2. 2Whisk miso paste, sesame paste, garlic, ginger, and chili paste together in each serving bowl.
  3. 3Bring the stock to a simmer and ladle a portion into each bowl, whisking to dissolve the miso mixture.
  4. 4Cook the ramen noodles until just tender and divide among the bowls.
  5. 5Top each bowl with the cooked pork, bean sprouts, and corn.
  6. 6Add a pat of butter to each bowl and top with an egg half and scallions.
  7. 7Serve immediately while piping hot.
