Ingredients
- 2 cups cornmeal
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup coconut milk or water
- 1 tsp vanilla extract
- Vegetable oil for frying
Instructions
- 1In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- 2Stir in coconut milk and vanilla until a smooth, slightly sticky dough forms; knead briefly.
- 3Cover and rest the dough for 15 minutes.
- 4Divide into 12 portions and roll each into a small log about 4 inches long.
- 5Heat oil to 350F in a deep skillet.
- 6Fry the festival logs in batches, turning often, until golden brown and cooked through, about 5-6 minutes.
- 7Drain on paper towels and serve warm alongside fried fish or ackee and saltfish.
