Ingredients
- 4 whole red snapper or fish steaks
- 1 tbsp all-purpose seasoning
- Vegetable oil for frying
- 1 cup white vinegar
- 1 carrot, julienned
- 1 chayote, julienned (optional)
- 1 onion, sliced into rings
- 1 scotch bonnet pepper, sliced into rings
- 1 red bell pepper, sliced
- 1 tsp allspice berries
- 1 tsp sugar
- Salt to taste
Instructions
- 1Score the fish and season with salt and all-purpose seasoning; let sit 20 minutes.
- 2Heat oil in a large skillet and fry the fish until golden and crisp on both sides, about 6-8 minutes per side; drain and set aside.
- 3In a saucepan, combine vinegar, carrot, chayote, onion, scotch bonnet, bell pepper, allspice, sugar, and salt.
- 4Bring to a boil, then simmer 5 minutes until the vegetables slightly soften but remain crisp.
- 5Pour the hot pickled vegetables and vinegar over the fried fish.
- 6Let marinate at least 1 hour before serving, at room temperature or chilled.
