Jamaican Curry Goat

Ingredients
- 3 lbs goat meat, bone-in, cut into chunks
- 3 tbsp Jamaican curry powder
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 scotch bonnet pepper, whole
- 2 scallions, chopped
- 1 tbsp fresh thyme
- 3 tbsp vegetable oil
- 2 potatoes, peeled and cubed
- 2 cups water or stock
- Salt and black pepper to taste
Instructions
- 1Toss the goat meat with 2 tablespoons curry powder, salt, and pepper, and marinate at least 2 hours or overnight.
- 2Heat oil in a heavy pot and bloom the remaining curry powder for 30 seconds until fragrant.
- 3Add the marinated goat and sear on all sides.
- 4Add onion, garlic, scallions, thyme, and the whole scotch bonnet pepper, stirring well.
- 5Pour in water, bring to a boil, then reduce heat, cover, and simmer 1 to 1.5 hours until the goat is tender.
- 6Add the potatoes during the last 25 minutes of cooking.
- 7Uncover and simmer until the gravy thickens slightly.
- 8Serve hot over white rice.
