Ingredients

  • 4 ripe plantains, sliced diagonally
  • Vegetable oil, for frying
  • 2 tomatoes, chopped
  • 1 onion, chopped
  • 1 scotch bonnet pepper, minced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • Grilled fish or hard-boiled eggs, for serving (optional)

Instructions

  1. 1Heat oil to 350°F in a deep skillet.
  2. 2Fry the plantain slices in batches 2-3 minutes per side until golden and caramelized; drain on paper towels.
  3. 3For the sauce, sauté onion and garlic until soft, then add tomatoes, tomato paste, and scotch bonnet.
  4. 4Simmer the sauce 10 minutes until thickened, seasoning with salt.
  5. 5Serve the fried plantain hot topped with the spicy tomato sauce.
  6. 6Pair with grilled fish or hard-boiled eggs if desired.
