The Story Behind It

The Tale of Involtini di Manzo

Story updated

Involtini, thin beef slices rolled around a savory filling and braised, appear in regional variations all over Italy, from Sicily to Abruzzo. There's no single inventor or origin point; the rolled, stuffed meat format is a common-sense way of stretching a cheaper cut across a family meal.

Ingredients

Scale:· 4 servings
  • 8 thin slices beef top round
  • 1/2 cup breadcrumbs
  • 1/2 cup Parmesan, grated
  • 2 cloves garlic, minced
  • 2 tbsp pine nuts
  • 2 tbsp raisins
  • 1/4 cup parsley, chopped
  • 3 cups tomato sauce
  • 2 tbsp olive oil

Instructions

  1. 1Mix breadcrumbs, Parmesan, garlic, pine nuts, raisins, and parsley for the filling.
  2. 2Lay beef slices flat and spread filling evenly over each.
  3. 3Roll each slice tightly and secure with kitchen twine or a toothpick.
  4. 4Brown the rolls on all sides in olive oil.
  5. 5Add tomato sauce, cover, and simmer 60-70 minutes until tender.
  6. 6Remove twine or toothpicks before serving with the sauce spooned over.
