The Story Behind It

The Tale of Sabich

Story updated

Sabich was created by Iraqi Jewish immigrants to Israel in the mid-20th century, who adapted a traditional Sabbath-morning fried eggplant and egg dish into a pita sandwich sold from street stalls, notably in Ramat Gan. It's often cited as one of Israel's few dishes with a clearly documented immigrant-community origin.

Ingredients

Scale:· 4 servings
  • 2 eggplants, sliced
  • 4 pita breads
  • 4 hard-boiled eggs, sliced
  • 1/2 cup hummus
  • 1 cup Israeli salad (diced cucumber, tomato, onion)
  • 1/4 cup pickled mango (amba) or mango chutney
  • 2 tbsp tahini sauce
  • Oil, for frying
  • Salt, to taste

Instructions

  1. 1Salt the eggplant slices and let sit 20 minutes, then pat dry.
  2. 2Fry or roast the eggplant slices in oil until golden brown and tender.
  3. 3Warm the pita breads and split them open to form a pocket.
  4. 4Spread hummus inside each pita and layer in the fried eggplant and sliced hard-boiled eggs.
  5. 5Add Israeli salad and drizzle with tahini sauce and amba.
  6. 6Serve immediately while the eggplant is warm.
