The Story Behind It

The Tale of Boxty

Story updated

Boxty, a potato pancake made from both raw grated and mashed potato, is especially associated with Ireland's northern border counties, Leitrim, Cavan, and Fermanagh, well known enough to have inspired an old regional rhyme about it. It's a resourceful way of using potato in two different textures at once.

Ingredients

Scale:· 4 servings
  • 1 lb raw potatoes, grated and squeezed dry
  • 1 cup mashed potatoes
  • 1 cup flour
  • 1 tsp baking soda
  • 3/4 cup buttermilk
  • 2 tbsp butter, for frying
  • Salt to taste

Instructions

  1. 1Combine grated raw potato with mashed potato in a bowl.
  2. 2Whisk flour, baking soda, and salt together, then fold into the potatoes.
  3. 3Stir in buttermilk to form a thick, spoonable batter.
  4. 4Heat butter in a skillet over medium heat.
  5. 5Spoon batter into the pan, flattening into rounds, and cook 4-5 minutes per side until golden.
  6. 6Serve warm, traditionally with butter or alongside a fry-up.
