Ingredients

  • 3 cups basmati rice, soaked and parboiled
  • 1.5 lbs boneless chicken thighs
  • 1 onion, sliced
  • 1 cup plain yogurt
  • 3 egg yolks
  • Pinch of saffron, bloomed in hot water
  • 4 tbsp butter, melted
  • 1/2 cup barberries, rinsed
  • 2 tbsp sugar
  • Salt and pepper, to taste

Instructions

  1. 1Cook chicken with onion, salt, pepper, and a little water until tender, then shred and reserve some cooking liquid.
  2. 2Whisk yogurt, egg yolks, saffron water, and half the melted butter together.
  3. 3Fold the parboiled rice into the yogurt mixture.
  4. 4Spread half the rice mixture in a greased baking dish, layer the shredded chicken on top, then cover with the remaining rice mixture.
  5. 5Drizzle with remaining butter, cover tightly, and bake at 375°F for 45-50 minutes until a golden crust forms on the bottom.
  6. 6Sauté barberries briefly in butter with sugar.
  7. 7Invert the tahchin onto a platter to reveal the crispy crust, and scatter barberries on top before serving.
