Chole Bhature

Ingredients

  • 2 cups chickpeas, soaked overnight and boiled
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 1 tbsp ginger-garlic paste
  • 2 tsp chole masala
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric
  • 2 cups all-purpose flour
  • 1/4 cup yogurt
  • 1/2 tsp baking powder
  • Oil, for frying and cooking
  • Salt, to taste

Instructions

  1. 1Knead flour, yogurt, baking powder, salt, and a little oil with water into a soft dough; rest 2 hours.
  2. 2Heat oil, sizzle cumin seeds, then sauté onions until golden.
  3. 3Add ginger-garlic paste, tomato puree, chole masala, and turmeric; cook until oil separates.
  4. 4Add boiled chickpeas with some cooking liquid and simmer 20 minutes until thick, mashing a few chickpeas for body.
  5. 5Divide the rested dough into balls, roll into ovals, and deep-fry in hot oil until puffed and golden (bhature).
  6. 6Serve the hot chickpea curry alongside the fried bhature.
