The Tale of Skyr with Berries

Skyr, a thick, tangy dairy product similar to strained yogurt, has been made in Iceland since the island's Norse settlement over a thousand years ago, with recipes carried by early Scandinavian settlers. Traditionally eaten with cream, sugar, and berries, it remains one of Iceland's oldest and most enduring foods.

Ingredients

Scale:· 4 servings
  • 3 cups skyr (Icelandic cultured dairy)
  • 1.5 cups fresh or frozen berries (blueberries, bilberries)
  • 2-3 tbsp honey or sugar
  • 1/4 cup milk or cream, to loosen
  • Crushed rye bread crumbs, for topping, optional
  • Pinch of salt
  • A few mint leaves, for garnish, optional

Instructions

  1. 1Spoon the skyr into a mixing bowl and whisk in a splash of milk or cream to loosen it to a smooth, spoonable consistency.
  2. 2Sweeten with honey or sugar to taste.
  3. 3Divide into serving bowls.
  4. 4Top generously with fresh or lightly stewed berries.
  5. 5Sprinkle with toasted rye bread crumbs for texture if desired.
  6. 6Serve immediately chilled, as breakfast or dessert.
