Chicken Paprikash

Ingredients
- 3 lb bone-in chicken thighs
- 2 tbsp lard or oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 tbsp sweet Hungarian paprika
- 1 tomato, diced
- 1 1/2 cups chicken broth
- 1 cup sour cream
- 1 tbsp flour
- Salt and black pepper
- Egg dumplings (nokedli) or noodles, for serving
Instructions
- 1Brown the chicken thighs in lard, then remove and set aside.
- 2Sauté onion and bell pepper in the same pot until soft.
- 3Off the heat, stir in the paprika, then return to low heat and add the tomato.
- 4Return the chicken to the pot, pour in the chicken broth, and simmer covered 30 minutes until the chicken is cooked through.
- 5Whisk the flour into the sour cream, then stir a ladle of hot broth into it to temper.
- 6Stir the sour cream mixture back into the pot and simmer gently until thickened; do not boil.
- 7Season with salt and pepper and serve over nokedli or noodles.
