The Tale of Tassot
Tassot, small chunks of meat, often goat or beef, marinated, boiled, and then deep-fried until crisp, is a classic Haitian preparation reflecting the country's Creole culinary tradition, which blends French, African, and Taíno Indigenous influences. It's typically served with pikliz, Haiti's spicy pickled cabbage relish, and fried plantains.
Ingredients
Scale:· 6 servings
- 2.5 lb beef or goat, cut into strips
- 1/2 cup sour orange or lime juice
- 6 cloves garlic
- 3 tbsp epis
- 1 scotch bonnet chili
- Vegetable oil, for frying
- Salt and pepper
Instructions
- 1Marinate the meat strips in the citrus juice, garlic, epis, chili, salt, and pepper for at least 1-2 hours.
- 2Simmer the marinated meat with its marinade and a little water in a covered pot 30-35 minutes until tender.
- 3Drain the meat well and pat dry.
- 4Fry in hot oil in batches until deeply browned and crisp on the outside, about 5-7 minutes.
- 5Drain on paper towels and serve hot with pikliz and fried plantains or rice.
