The Tale of Soupe Kandia
Soupe kandia, an okra-based soup, is a specialty of Guinea and the broader Senegambia region, showcasing okra's role as a natural thickener in West African cooking traditions that stretch back centuries. It's typically prepared with palm oil, fish, or meat and served over rice.
Ingredients

- 4 cups fresh okra, chopped
- 1 cup smoked fish, flaked
- 2 tbsp dried fish or shrimp
- 3 tbsp palm oil
- 1 onion
- 2 cloves garlic
- 1 tbsp tomato paste
- 1 chili pepper
- Salt, to taste
- 2 cups water
Instructions
- 1Heat the palm oil and saute the onion and garlic until fragrant.
- 2Stir in the tomato paste and cook 2 minutes.
- 3Add the chopped okra and cook, stirring, until it starts to release its natural thickening mucilage.
- 4Add the smoked fish, dried shrimp, chili, and water.
- 5Simmer 25-30 minutes, stirring occasionally, until thick and glossy.
- 6Season with salt and serve over rice or with fufu or attieke.
