The Story Behind It

The Tale of Fonio with Vegetables

Fonio is one of the oldest cultivated grains in West Africa, grown for thousands of years across the Sahel and prized for its drought tolerance and quick growing cycle in a region with unpredictable rainfall. In Guinea it remains an important traditional grain, often cooked simply with vegetables as a wholesome, everyday staple.

Ingredients

Scale:· 6 servings
  • 2 cups fonio grain
  • 3 cups water
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic
  • 3 tbsp vegetable oil
  • 1/4 cup dried shrimp or smoked fish, optional
  • Salt, to taste

Instructions

  1. 1Rinse the fonio briefly in a fine sieve.
  2. 2Bring the water to a boil, add the fonio and a pinch of salt, cover, and simmer 8-10 minutes until tender and the water is absorbed, then fluff with a fork.
  3. 3Separately, saute the onion, garlic, tomato, and bell pepper in oil until softened.
  4. 4Add the dried shrimp or smoked fish, if using, and cook a few minutes.
  5. 5Fold the cooked vegetable mixture through the fluffed fonio.
  6. 6Season with salt and serve warm as a side dish or light main.
