The Tale of Guinea-Bissau Jollof-Style Rice
Story updated
Guinea-Bissau's jollof-style rice reflects the country's place within the broader Senegambian rice tradition, sharing roots with Senegal's thiéboudiène and the Gambia's benachin. Cooked in one pot with tomato, vegetables, and meat or fish, it draws equally on the country's Portuguese colonial history and its West African culinary neighbors.
