The Tale of Chabeu

Chabeu, a rich sauce made with palm oil and often peanuts, reflects Guinea-Bissau's West African cooking traditions built around palm oil as a foundational fat, shared with palm-based sauces throughout the coastal region. It's typically served over rice with fish or meat as a staple home-cooked dish.

Ingredients

Scale:· 6 servings
  • 3 cups rice
  • 1/2 cup palm oil
  • 1.5 cups dried or smoked fish, flaked
  • 1 onion
  • 3 cloves garlic
  • 2 tomatoes
  • 1 chili pepper
  • 4 cups water
  • Salt, to taste

Instructions

  1. 1Heat the palm oil in a pot and saute the onion and garlic until fragrant.
  2. 2Add the tomato and cook down slightly.
  3. 3Add the flaked fish and chili, and cook a few minutes to combine.
  4. 4Add the rinsed rice and water, and season with salt.
  5. 5Bring to a boil, then cover and reduce heat, cooking 20-25 minutes until the rice is tender and infused with the deep orange palm oil color.
  6. 6Fluff and serve as is or alongside a vegetable side.
