Grenadian Saltfish Souse

Ingredients
- 1 lb salted cod, soaked and desalted
- 1 cucumber, sliced
- 1 onion, thinly sliced
- 1 scotch bonnet pepper, minced
- Juice of 4 limes
- 2 tbsp olive oil
- Salt and black pepper to taste
- Chopped parsley, for garnish
Instructions
- 1Soak the salted cod overnight in several changes of water, then simmer in fresh water for 10-12 minutes until tender.
- 2Drain and flake the fish, removing skin and bones.
- 3Combine the flaked fish with cucumber, onion, and scotch bonnet pepper in a bowl.
- 4Pour lime juice and olive oil over the mixture and toss well.
- 5Season with black pepper and let marinate at least 30 minutes in the refrigerator.
- 6Garnish with chopped parsley before serving.
- 7Serve chilled as a light lunch or appetizer.
