The Tale of Nutmeg Ice Cream
Grenada is known as the "Isle of Spice," having become one of the world's top nutmeg producers after the crop was introduced from Indonesia's Banda Islands in the 19th century, and nutmeg remains central to the island's identity, even appearing on the national flag. Nutmeg ice cream showcases that signature spice in a distinctly local dessert.
Ingredients
Scale:· 6 servings
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 4 egg yolks
- 2 tsp freshly grated nutmeg
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- 1Heat the milk, half the cream, grated nutmeg, and a pinch of salt in a saucepan until steaming.
- 2Whisk the egg yolks with sugar until pale.
- 3Slowly pour the warm milk into the yolks while whisking constantly to temper.
- 4Return the mixture to the saucepan and cook gently, stirring, until it thickens enough to coat the back of a spoon.
- 5Strain the custard into a bowl set over ice, stir in the remaining cream and vanilla, and chill thoroughly, at least 4 hours.
- 6Churn in an ice cream maker according to the manufacturer's instructions.
- 7Freeze until firm, at least 4 hours, before serving with an extra grating of fresh nutmeg on top.
